    Producer Jim's Triple Threat Chili
    Ingredients:
    2 lbs Pork Loin, thin cross-grain cut, then into strips
    1 yellow onion diced to preference
    1 red onion diced to preference
    1 bell pepper, stripped, diced to taste
    1 cerrano pepper, seeded, stripped, diced fine
    6 cloves fine chopped garlic

    1lb Can diced toms
    1 medium can kidney beans
    ½ can of beer
    2 Tbsp. chili powder
    2 tsp. ground cumin
    1 tsp. oregano
    ½ tsp black pepper
    2 tbsp. annatto paste
    Dash cinnamon

    Directions:
    Brown pork, add peppers, cook till softened… add onions and garlic… cook till translucent. Add everything else and simmer at least two hours. Best if cooled and reheated. Add heat with crushed red peppers or powdered cayenne to taste.
